THE MANAGERS BLOG – APRIL 2022!

Spring has sprung here in the northwest highlands! With April upon us and winter all but a memory we can now look forward to warmer spring days and sunset filled evenings here in Achiltibuie. There surely is no better time to visit the Coigach peninsula than during the spring months when the roads are that bit quieter, the midges are not yet out and about, and sunshine filled days with nature bursting into bloom are in plentiful supply.

Here at the Summer Isles Hotel we have been very busy behind the scenes organising a super team for the 2022 season as well undertaking some essential maintenance work around the hotel building and grounds. I can say that we are very excited about the season ahead which commences on April 1st and I look forward to welcoming back friends and patrons who have stayed with us before as well as inviting those who have not to venture up and explore this magical corner of Scotland.

CHEFS NEW MENUS

Our head chef Tomas has been very productive over the winter months and is now delighted to have his new menus in place for the 2022 season. Tasty and flavour filled dishes such as wilds seabass roulade with clams, black olive and peppers will be available alongside more traditional offerings such as chefs homemade beer battered fish and chips. Our menus have a big focus on fresh seafood sourced locally and Tomas is keen to  showcase the amazing range of fresh produce which is literally on our doorstep.

To compliment the new menus we also have a freshly updated wine list which includes a comprehensive array of quality and delicious wines from around the globe. What better way to spend a spring afternoon than over a dish of freshly grilled langoustines and a glass of Sancerre!

OUT AND ABOUT

Time to explore the northwest! Our Hotel lies in the heart of Achiltibuie and affords undisturbed views out to the Summer Isles and beyond. It is a wonderful untamed, breath-taking region which repays exploration. For outdoor lovers we have good news in that we are collaborating with a local community group to provide and offer a range of fabulous walking maps and books for sale here at the hotel. For those that prefer to drive we also have some newly presented driving cards and maps which showcase the local area and details some super driving routes across this corner of the Highlands.

And…if cycling is more your thing then we have teamed up with a local cycling hire company and therefore are excited to be able to offer cycle hire to all of our guests this year direct from the hotel with modern , well maintained bicycles and helmets. I can certainly say that this area is a cyclists dream with the roads and routes providing beautiful unmatched coastal views at almost every angle, quiet undulating roads and clean fresh highland air.

And of course, after a long day out exploring you can return to the hotel, relax, unwind, enjoy a wonderful meal and a delicious glass or two of wine or champagne. Whatever takes your fancy!
